Cooking With Viti - Spring Salad

  • 1 handful dandelion leaves
  • 1 handful ramsons
  • 1 beetroot
  • 1 apple
  • some seeds
  • some daisy flowers :)
  • olive oil
  • lemon juice
  • salt and black pepper

1) Boil the beet root (45 min)
2) Wash, dry and cut the leaves of ramsons and dandelion into stripes
3) Roast the seeds
4) Peel beet root and cut the root and the apple into pieces
5) Make a french dressing out of lemon juice, olive oil, salt and pepper (when I am home I usually add 1 teaspon of sweet bavarian mustard, 1 teaspoon of jam, and some drops pumpkin oil to the dressing)
6) Mix everything and decorate with the daisy flowers
